McGriff has been an insurance regulator with the South Carolina Department of Insurance since 1995, serving in various capacities: Acting Director, deputy director for Financial Services, deputy director for Consumer and Individual Licensing Services, and general counsel. Prior to joining the Department of Insurance, she served in various capacities as in-house counsel, including associate general counsel at the University of South Carolina, legal counsel at South Carolina State University, and as a staff attorney with the appellate division (criminal appeals) of the South Carolina Office of Attorney General.

Fuller-McGriff was appointed Acting Director for the South Carolina Department of Insurance by South Carolina Gov. Nikki Haley after director David Black decided to step down in Dec. 2011.
