Pollastrini earned her BA in Political Science/English/Theology from Loyola Chicago in 1989. She went on to receive her JD from DePaul University in 2005. She has worked as public information manager for the DuPage County State Attorney, Joe Birkett. She is currently an attorney.

Pollastrini ran in the 2012 election for Illinois House of Representatives District 42. Pollastrini was defeated by Jeanne M. Ives in the Republican primary on March 20, 2012.[1][2]
